Do tamales need to be refrigerated?

Refrigeration is not just for storing tamales, but is also advised in the recipe.

According to homemade-tamales.com, to store tamales,

“Just wrap them well and store in refrigerator. Or if you'd like to store them longer, place tamales in a plastic container, then store in freezer. You can store them in the freezer for up to 6 months. To store tamales longer than 6 months, use a vacuum sealer.”

The tamale recipe from www.texmex.net states that after seasoning the meat with fajita seasoning, it should be refrigerated overnight, “if time permits.” After cooking the meat, it should be allowed to cool then refrigerated overnight.

The recipe for Tamal Dough from www.rickbayless.com advises that, after the batter is prepared, it should be refrigerated for an hour or so for “the lightest textured tamales.” Anna Zepaltas from www.foodandwine.com includes refrigerating the dough for 30 minutes before it is beaten and used to make tamales.
