A clear soup is a flavored broth, stock or consommé. A good recipe for chicken stock takes 1/2 a chicken, a stick of celery, a carrot, a bunch of parsley and basil, a quarter of an onion, 3-5 peppercorns, and salt to taste. Add the meat and vegetables to 2-3 quarts of cold water and heat to a boil. Turn the temperature down to a simmer and simmer the brother for 2-3 hours until the meat is fork tender. Let it cool then skim the fat from the top. Use a colander to strain the liquid into a container.
