In general, when using an outdoor propane turkey fryer plan on deep frying a whole turkey for 3 minutes to 4 minutes per pound and turkey parts for 4 minutes to 5 minutes per pound. When using an indoor electric turkey fryer plan on deep frying a whole turkey for 3 minutes per pound plus an extra 5 minutes.
A 22 pound turkey should take about an hour and 20 minutes total to deep fry. Preheat oil to 375°F if using an outdoor propane turkey fryer. Preheat oil to 400°F if using an indoor electric turkey fryer.
When frying turkeys larger than 22 pounds experts recommend that you detach the leg and thigh portions from the bre@st and fry the two turkey parts separately. First, fry the leg/thigh sections in oil that has been preheated to the desired temperature for 16 minutes to 18 minutes. Cook to an internal temperature of 175°F to 180°F. Remove the dark sections and reheat the oil. Then fry the turkey bre@st for 60 minutes to an internal temperature of 165°F to 170°F.
Let the cooked turkey rest for at least 30 minutes before carving.
In case of a fire, turn off the propane and use a grade B fire extinguisher to put out the flames.
